And then there was music

Oak Aged UnEarthly India Pale Ale : Another Phenomenal offering from Southern Tier Brewing Company.

I let this bottle sit in my fridge for several months. I couldn’t bring myself to drink  it because I didn’t want it to be gone. And now it’s gone. And I’m sad…but I’d drink it again in a heartbeat.

I was impressed with how much the oak came through in the taste. I wonder if it was aged in oak barrels or with oak chips. It was only slightly sweet, which was good, and had a predominant citrus hop taste that one would expect from using two additions of cascade hops…one of which was dry hopping.

If you ever see it offered again, pick up an extra one for me; I’ll pay you back, I promise.

Thanks for picking this up for me. It was very good, and well worth the wait. The next IPA I brew is going to be along this line: lots of citrus hops, caramel malts, and oak.

No problem. I actually just drank mine two nights ago. I’ve decided it’s time to drink the bombers I’ve been collecting. They’re not doing me any good sitting there. Actually, they’re doing me some damage. I don’t feel like I should be buying new and different ones when I’ve already got those in the fridge, and there are a couple I’ve been looking at and wanting to buy. Time to quit missing out.
